I love a well shaped paring knife for so many little tasks in the kitchen, it’s probably the knife I use the most. A narrow blade makes it easy to make curved cuts like coring a pepper, and the octagonal handle fits right in the knuckles of your fingers for peeling cuts.

This one has a blade made from 100 layer twist stainless damascus forged in house from AEB-L and CPM154 steels. The handle is stabilized spalted tamarind wood with a synthetic opal inlay on either side, and a nickel silver cap on top.
